Vegetarian, vegan and low-carbohydrate diets have long been very popular ways to do this. However, studies are now showing that a gluten-free diet may also help in the fight against cancer.</p><p>Gluten is a protein found in wheat, barley, rye and spelt. It is also frequently a source of allergen cross-contamination in many foods. Current statistics show that only five to ten percent of Americans suffer from some form of intolerance to gluten. In spite of those numbers, though, many researchers believe that the vast majority of Americans have trouble with gluten, whether or not they have any obvious symptoms.</p><p>Even for people with uncompromised immune systems, gluten has been found to have many negative effects on health, digestion and nutrient absorption. Inside the digestive system, gluten forms a thick, paste-like substance that smothers the lining of the intestines. It is believed that this can significantly hinder the availability of nutrients from food. This one fact alone makes a strong case for avoiding gluten during and after cancer. Adequate nutrition is considered an essential part of cancer therapy and recovery.</p><p>In individuals with sensitivity to gluten, it can cause serious immune dysfunction. The body interprets the protein as an invader or foreign substance and reacts accordingly. When this happens, the immune system unwittingly attacks the body because there is no real pathogen to fight off. Theoretically, this can increase cancer susceptibility. Furthermore, some products labeled as gluten-free are subject to contamination and carry warning stating so.</p><h2>Beware of Hidden Sources</h2><p>Foods like oats, brown rice syrup, MSG, malt and some flavorings are often hidden sources of gluten.</p><h2>Avoid Dining Out</h2><p>Choosing from a restaurant's gluten-free menu doesn't guarantee safety from gluten. You never know how the ingredients were manufactured. It also doesn't ensure that the staff will use the appropriate caution against cross-contamination.</p><p>There are many gluten-free alternative recipes to satisfy your every craving. Below is an easy gluten-free chocolate chip cookie recipe from the <a href="http://www.foodnetwork.com/recipes/alton-brown/the-chewy-gluten-free-recipe/index.html">Food Network</a>.</p><h3>What you'll need:</h3><ul>    <li>8 ounces unsalted butter</li>    <li>11 ounces brown rice flour, approximately 2 cups</li>    <li>1 ¼ ounces cornstarch, approximately ¼ cup</li>    <li>½ ounce tapioca flour, approximately 2 tablespoons</li>    <li>1 teaspoon xanthan gum</li>    <li>1 teaspoon kosher salt</li>    <li>1 teaspoon baking soda</li>    <li>2 ounces sugar, approximately 1 ¼ cups</li>    <li>1 whole egg</li>    <li>1 egg yolk</li>    <li>2 tablespoons whole milk</li>    <li>1 ½ teaspoons vanilla extract</li>    <li>12 ounces semisweet chocolate chips</li></ul><h3>Directions:</h3><ol>    <li>Preheat the oven to 375°.</li>    <li>Melt the butter in a heavy-bottom medium saucepan over low heat. Once melted, pour into the bowl of a stand mixer.</li>    <li>In a medium bowl, sift together the rice flour, cornstarch, tapioca flour, xantham gum, salt and baking soda. Set aside.</li>    <li>Add both of the sugars to the bowl with the butter and using the paddle attachment, cream together on medium speed for 1 minute. Add the whole egg, egg yolk, milk and vanilla extract and mix until well combined. Slowly incorporate the flour mixture until thoroughly combined. Add the chocolate chips and stir to combine.</li>    <li>Chill the dough in the refrigerator until firm, approximately 1 hour. Shape the dough into 2-ounce balls and place on parchment-lined baking sheets, 6 cookies per sheet. Bake for 14 minutes, rotating the pans after 7 minutes for even baking. Remove from the over and cool the cookies on the pans for 2 minutes. Move the cookies to a wire rack and cool completely. Below is a delicious <strong><em>Baked Pasta with Kale</em></strong> recipe:</p><p><strong>What you will need to make this deliciously healthy pasta dish:</strong></p><ul>    <li>1 pound of whole-wheat pasta (your choice)</li>    <li>1 pound bunch of kale, stems discarded and leaves cut into 2-inch pieces.</li>    <li>3 tablespoons of olive oil</li>    <li>1 onion chopped</li>    <li>1 tablespoon all-purpose flour</li>    <li>14 ounces of diced tomatoes</li>    <li>½ teaspoon crushed red pepper flakes</li>    <li>1 cup non-fat ricotta cheese</li></ul><img width="230" class="floatright" alt="Baked pasta with kale" src="/images/blog/posts/BakedPastaKale.jpg" /><p><strong>Directions:</strong></p><ol>    <li>Heat oven to 350 degrees F. Cook the pasta according to the directions on the package. Add the kale during the last 3 minutes of cooking. Drain the pasta and kale and return it to the pot.</li>    <li>Heat 1 tablespoon oil in large nonstick skillet over medium heat. Add the chopped onion and remaining 2 tablespoons of oil to the skillet. Season with ½ teaspoon of both salt and pepper and cook. Keep covered, stirring occasionally until tender, 6-8 minutes.</li>    <li>Sprinkle the flour over the onion mixture and cook, stirring for 1 minute. Gradually add 1 cup of water. Simmer stirring occasionally until slightly thickened. Stir in crushed red pepper.</li>    <li>Add sauce to pasta and kale and toss to coat. Add tomatoes and ricotta.</li>    <li>Transfer the pasta mixture to a 3-quart or 9- by 13-inch casserole dish. Bake until heated through and golden brown, 20 to 25 minutes.</li></ol><p>This dish is incredibly healthy and a great option to cook ahead and eat throughout the week. Cruciferous Vegetables</strong><br />Cruciferous vegetables are highly nutritious for everyone, but especially for those with cancer because they contain phytonutrients. These types of vegetables are even better for breast cancer patients or those concerned about breast cancer because they help produce healthy estrogen. Cruciferous vegetables include broccoli, broccoli rabe, brussel sprouts, cabbage and kale.</p><p><strong>2. Dark Green, Leaf Veggies</strong><br />These types of vegetables have a plethora of vitamins and taste delicious in holiday dishes. These include spinach and kale.</p><p><strong>3. Ginger</strong><br />Some sweets are okay for cancer patients, but make sure you eat the right kinds of cookies. Ginger contains anti-inflammatory properties, which help quell side effects from cancer treatment like chemotherapy. Ginger ale or ginger supplements are best for helping with these side effects.</p><p><strong>4. Candy Canes</strong><br />Peppermint hard candies and peppermint tea relieve dry mouth but also help with nausea. Some studies have shown that the oil in peppermint can reduce spasms in the esophagus. This can help with dehydration among many other side effects that cancer patients face.</p><p><strong>5. Protein-Rich</strong><br />Eggs, beans and legumes are great to eat for cancer patients because they contain protein. These kinds of foods help immune systems, improving the healing process and cell repair. They also contain vitamin B, which helps with energy and skin.</p><p><strong>6. Fatty Fish</strong><br />According to studies by the journal Cancer Epidemiology, Biomarker and Prevention, women who ate fatty fish containing omega-3 fatty acids lowered their cancer risk but also decreased inflammation in cancer patients. Any holiday dishes with pollock, yellowtail, mahi mahi or salmon are great for this diet.</p><h2>The Bad Stuff</h2><p><strong>1. Red Meat</strong><br />When grilled, red meat creates something called heterocyclic amines (HCAs), which drive cancers. Red meat also contains amino acids that stimulate oxidation and insulin, both of which also produce cancer risk. <a href="http://news.bbc.co.uk/2/hi/health/6523009.stm">Studies</a> showed that women who ate well done meat three times a week increased their breast cancer risk by 400 percent. While turkey may be okay, stay away from steak and burgers this holiday season.</p><p><strong>2. Processed Meats</strong><br />Cured hams are off the diet plan this holiday. Unfortunately, research has shown that compounds in processed meats like bacon, ham, hot dogs and deli meats increase the chance of cancer-compounds in the body.</p><p><strong>3. Vegetable Oils</strong><br />You should take steps to prepare dishes without vegetable oils, including soybean, safflower, sunflower and corn, because they are high in polyunsaturated fats, which have been shown to increase oxidation in the body. Instead, cook and eat only foods made with extra virgin olive oil or canola oil.</p><p><strong>4. Sweets</strong><br />Many sweets contain preservatives, lots of sugar, and refined carbohydrates. Medications, anxiety, and the nature of how cancer affects the body in itself can all sway the desire and ability to eat. Any phase of a cancer patient’s journey should include good nutrition and awareness of the negative consequences of a body deprived of nutrients. Providing the body with adequate nutrition during times of anorexia, loss of appetite, and prevention of cachexia, the permanent loss of body mass, is an important strategy to maintain health during treatment and recovery from cancer. Drinking enough fluid is an integral part of nutrition during treatment. The blood vessels must be hydrated enough to dilute toxic infusions and circulate the medications throughout the body. Harmful toxins have to be flushed out of the system without harm to the organs. Some medications are toxic to the kidneys and liver. People in chemotherapy must be vigilant about hydrating the body and drinking enough fluids.</p><p><strong>Nutrition in Recovery</strong></p><p>Cancer patients that keep the body well nourished and hydrated, increase their completion of treatment and enter recovery. In most cases the healing is performed by another person, who has training or a natural ability. Basically, the healing is done by directing lighted energy towards the patient, which may include direction towards the physical, spiritual and emotional sources of the disease. In many cases energy healing can be done from a distance, as well as in person. </p><p>It is said by some healers that everyone has healing abilities in their hands.
